    Saint-Romain "Sous Le Château" 2022
    • At the foot of an imposing limestone cliff, where a medieval castle once stood and, even earlier, a 4th-century necropolis. We are in Saint-Romain, one of the highest and most evocative villages of the Côte de Beaune, where the vineyards seem to climb the rock in search of the sun. It is precisely here, beneath the remains of that ancient fortress, that the Saint-Romain "Sous le Château" by Olivier Leflaive is born. The terroir of Saint-Romain is a small paradise for lovers of geology and history. The vineyards of the "Climat" Sous le Château benefit from a south-east exposure that ensures slow and steady ripening, essential in an area where altitudes range between 290 and 430 metres. Interestingly, these steep slopes were abandoned after the phylloxera epidemic and only returned to prominence in the 1970s thanks to an extensive restoration effort. The soil is composed of marl and limestone with veins of clay that give Chardonnay a mineral character almost impossible to find elsewhere in Burgundy. The grapes are harvested by hand and immediately partially and gently pressed. After a static settling of 24 hours, the must undergoes both alcoholic and malolactic fermentation directly in oak barrels. Ageing lasts 12 months, partly in barriques and the final months in stainless steel tanks to preserve the freshness of the fruit. The skilful use of small oak barrels gives structure without ever covering the vibrant soul of the wine. From the very first glance it appears bright straw yellow with emerald reflections. On the nose, the typical note of struck match, the sign of a noble and well-managed reduction, blends with aromas of white flowers, green apple and a hint of fresh butter. On the palate it is a burst of energy. Lemon tension and stony salinity stimulate salivation, while the generous body envelops the palate with balanced softness. The finish is long and clean, with returning notes of citrus and minerality. Perfect with sea bass baked in salt or with a delicious roast chicken with chilli.

This allows him to send his own teams to harvest and to control every stage, from the vineyard to the bottle, ensuring a style that has become his trademark: precision, balance and absolute fidelity to the terroir. The strength of Olivier Leflaive lies in his extraordinary knowledge of the Côte d'Or. The company manages around 120 hectares of vineyards (17 of which are owned), spanning names that make every wine lover dream: Puligny-Montrachet, Meursault, Chassagne-Montrachet and the legendary Grand Crus such as Bâtard-Montrachet.
