On the nose it bursts with intense aromas of white flowers, citrus fruits (citron and grapefruit) and white peach, followed by saline notes and aromatic herbs typical of coastal Vermentino. On the palate it is fresh and savoury, with a vibrant acidic backbone and a light yet coherent structure. The flavours recall fresh fruit, lemon zest and a pleasant mineral touch, with a clean, dry and persistent finish. A white wine that invites another sip, perfectly balanced between freshness and flavour, ideal with seafood dishes and Mediterranean cuisine.
    • Vinification The grape harvest began in early September, in the early morning to preserve aromatic potential supported by good acidity; starting with Manzoni Bianco and Viognier, then at the end of September Vermentino, harvested in two stages, by hand selecting the best bunches and transported to the cellar in small crates. The musts from the Viognier grapes, harvested first, macerated and fermented with the skins and indigenous yeasts at low temperature in stainless steel tanks for over 15 days. The Vermentino grapes, harvested in two passes, were destemmed, softly pressed and fermented separately. Finally the four wines were blended together.

    • Close your eyes. Imagine standing on a cliff along the Costa degli Etruschi, with the wind carrying the scent of sea salt and Mediterranean scrub. In the glass, a white wine that perfectly represents that landscape. We are talking about the Vermentino “Un po’ più sul mare” from Mulini di Segalari. We are in Castagneto Carducci, a place where the vines breathe the air of the Tyrrhenian Sea and sink their roots into soil steeped in noble winemaking tradition. The Mulini di Segalari winery was born along the Segalaia stream, in an area where ancient mills once stood. Here the management is artisanal and follows the rhythms of nature. The wine, a Costa Toscana IGT, comes from a blend of Vermentino, which makes up 85% and gives the classic maritime and Mediterranean character, Viognier (8%) adding body and exotic fruit notes, and the remaining share of Incrocio Manzoni Bianco. This noble grape variety brings finesse and a vibrant acidity, acting as a true backbone for the wine’s freshness. The process begins in September with the manual harvest of Manzoni and Viognier in the coolest hours of the morning. The Viognier undergoes a skin maceration of more than 15 days with indigenous yeasts. Vermentino, on the other hand, is harvested in two separate phases to capture both freshness and full ripeness. Only at the end are the four different musts blended together to create perfect harmony. The vineyards lie between 90 and 120 metres above sea level on clay-silt soils, ensuring a light yet coherent structure. Bright straw yellow with greenish reflections, the nose reveals citrus notes of citron and grapefruit, followed by white peach intertwined with aromatic herbs and an unmistakable saline hint. On the palate it is vibrant. The sip is fresh and dry, leaving a mineral touch that cleanses the palate perfectly. A wine that focuses entirely on fragrance and fruit energy, best enjoyed while its acidity is at its peak. It is not a white wine to forget in the cellar, but one to open at the first good opportunity.

The estate was born from the passion of Emilio Monechi and Marina Onesti, who chose to bring new life to a magical place: a valley crossed by the Segalari stream, where ancient mills once stood. We are in the cooler, hillier part of the Bolgheri appellation, about 100 metres above sea level. While the Bolgheri coast is kissed by sun and warmth, the vineyards of Mulini di Segalari enjoy a unique microclimate, protected by woods and refreshed by sea breezes. The result? Wines that do not rely solely on power, but surprise with remarkable freshness and drinkability. The estate is organically certified and follows biodynamic principles. The philosophy is to “accompany” the grapes, not force them. Indigenous yeasts are used and the use of sulphites is kept to a minimum. It is an approach that requires courage and total dedication, yet it produces wines capable of reflecting the vintage and the soil almost photographically. Just under 3 hectares of vineyards host the classic grape varieties of the area: Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot, along with a touch of Sangiovese and Vermentino.
