"La Gabacha" Sauvignon Blanc 2021 DO Rueda

Gabacha is a 100% Sauvignon Blanc. But not the classic aromatic white. Starting with vineyards that are between 20 and 30 years old, and located at an elevation of about 750 meters above sea level. A place more unique than rare, with a very special microclimate. The grapes are harvested by machine, overnight, to ensure that the heat does not go to ruin such valuable raw material in any way. After harvesting, then, the grapes are macerated briefly to cold extract all the aromas and flavors of the berries. Then, for the next stage of fermentation, only free-run must is used, and at the end the wine is aged for no less than three months on its own yeasts. Straw yellow color, clean and transparent, the nose is an explosion of aromas, with great intensity. Tropical notes, such as mango and pineapple, accompanied by subtle hints of citrus and plant aromas characteristic of the variety. In the mouth, it is ample, fresh, with intense acidity that is perfectly balanced with subtle residual sweetness. A complex and intense white, it requires a rich pairing in terms of flavor. For lovers of Cantabrian anchovies, for example, this is the right bottle to experience.
