In this case, the proposed red comes from a pure processing of Marselan grapes, a variety whose father is Cabernet Sauvignon and mother is Garnacha. Made from low-yielding vines vinified in small fermentation tanks, after processing it is matured in new French oak barrels for more than 14 months before being bottled without cold stabilization to keep it as pure as possible. A powerful, tasty and balanced red, it can accompany refined meat dishes, even game, or be used as a pleasant aperitif to accompany a board of cured meats or medium-aged cheeses. For lovers of healthy cooking, however, it also goes well with slightly spicy vegetarian dishes. Good even today, it can be stored for up to 10 years in the cellar.
