Produced from old vines grown in the foothills of the Sierra de Cantabria, Rioja DO Crianza is made from 100% Tempranillo grapes, processed and harvested entirely by hand. The production process begins with a maceration of around 24 hours that precedes the delicate fermentation phase. This takes place in stainless steel vats and continues for at least 8 days at a controlled temperature of 24°C. This allows the cellar technicians to optimise the process of extracting aromas and fragrances from the raw material. The subsequent phase of maturation in wood, typical for the type, is necessary to give the wine that 'extra gear'. In the glass, it has a beautiful cherry red colour with slight brick tones. On the nose, aromas of cocoa, vanilla and coffee, due in large part to the maturing phase, while in the mouth it reveals good body and a strong character. The finish is lively and fragrant, with notes of ripe fruit and liquorice. A round and harmonious wine, it is ideal as an accompaniment to meat, legumes, pasta and semi-mature cheese.
Botega Sonsierra was inaugurated on 15 May 1962 and today represents the second largest bottling cooperative in Rioja.
