The history of Crémant d'Alsace is inextricably linked to the Dopff family and, in particular, to Julien Dopff who, around 1900, was the first to successfully apply the famous bottle fermentation method to Alsatian wines, starting a tradition of sparkling wines of the highest quality. We are in the heart of Alsatian viticulture, in Riquewihr, the medieval village dominated by the historic Château, home to the Dopff & Irion maison. This area, protected by the Vosges mountains, enjoys a continental climate, dry and sunny, ideal for slow and gradual ripening of the grapes, preserving their acidity, a crucial element for the success of a great sparkling wine. This sparkling wine is the result of a skilful blend: a mix of Pinot Blanc (48%), Auxerrois (48%) and a small percentage of Chardonnay (4%). Pinot Blanc provides structure and freshness, Auxerrois adds softness and enveloping aromas, while Chardonnay contributes a touch of elegance and longevity. The combination of these three grape varieties creates a cuvée of great balance and depth. While many sparkling wines are content with minimal ageing, Cuvée Prestige raises the bar. Its richness and complexity come from slow maturation for over 24 months in contact with the lees. This prolonged ageing, well beyond the minimum requirement, is the key to developing the more sophisticated and complex notes typical of a high-quality sparkling wine. The nose is intense and enveloping. Classic yeast notes stand out, blending with hints of quince and an intriguing array of fine herbs and spices, with references to tarragon, cinnamon and saffron. On the palate, it is elegant and full-bodied, with remarkable persistence and well-integrated acidity. It is a versatile sparkling wine, ideal for an entire meal.

The name Dopff & Irion comes from the union of two prominent families. There are two key figures. The first is Madame Jeanne Irion, one of the founders, who already at the time demonstrated that women had a central and authoritative role in viticulture. The second is René Dopff, an enlightened producer who, once he returned from the war, decided to join forces with the widow Irion. Their founding act was a symbolic and concrete gesture: the purchase of the historic Château de Riquewihr, built in 1549 and surrounded by green vineyards. This is not only the company's headquarters but the very embodiment of its philosophy: to honour Alsatian tradition by always focusing on the highest quality. René Dopff was a true pioneer in Alsace, focusing from the outset on the pursuit of quality at all costs, starting with a significant reduction in vineyard yields. He was also one of the first to indissolubly link the name of a grape variety to its specific terroir. This is no small choice: it means that every bottle of Dopff & Irion is a faithful portrait of the land from which it comes.
