Produced entirely from Prié Blanc grapes, an indigenous Valdostan vine, the Blanc du Blanc Extra Brut from Cave Mont Blanc de Morgex et La Salle is a sparkling wine that stands out for its freshness and elegance. The Valle d'Aosta is a unique region due to its Alpine climate and particular geological conformation. Here we speak of heroic viticulture. The vineyards of Morgex and La Salle, located at the foot of Mont Blanc, extend between 900 and 1200 metres above sea level, one of the highest vineyards in Europe. This ‘extreme’ position and the significant temperature fluctuations favour a slow ripening of the grapes, allowing the Prié Blanc to develop a marked acidity and a mineral imprint that reflects the rocky and sandy soils of the region. The Prié Blanc here is free-range, i.e. not grafted onto American stems. This is an anomaly due to the isolation of the Aosta Valley, which preserved these vines from phylloxera, the parasite that devastated most European vineyards. Blanc du Blanc is produced according to the Classical Method, the same used for Champagne, with re-fermentation in the bottle. After the harvest, the base wine undergoes an initial fermentation in both stainless steel and barriques. Then, after bottling, the wine rests on its lees for at least 18 months, during which time it develops finesse and elegance. Dosed Extra Brut, it reveals a dry and clean profile. To the eye, the Blanc du Blanc has a straw-yellow colour with greenish reflections, a sign of freshness and vivacity. The bubbles, on the other hand, are fine and persistent, indicative of careful processing and prolonged ageing. The nose is intense and fine, with floral notes that intertwine with fruity hints, creating a symphony of delicate and enveloping aromas. In the mouth, the wine impresses with its persistence and taste balance. Aperitifs and regional specialities are its ideal accompaniment. Try it with Lardo DOP from Valle d'Aosta or with a vegetable flan with fondue.
