Trentodoc Brut, AlpeRegis from Cantina Rotari is a small oenological masterpiece. It is no coincidence that this sparkling wine is called AlpeRegis, meaning “King of the Alps”. The name evokes the valiant Lombard king Rotari, but above all celebrates the majesty of the territory. We are in the hills north of Trento, where Chardonnay, the queen of grapes for this label, finds its perfect habitat. Here, the vineyards reach almost mountainous heights and the nature of the soil, often calcareous and rich in stones, works in symbiosis with a unique microclimate. The real trump card is the temperature range: sunny days are balanced by cool, breezy nights. This temperature change allows the grapes to develop a complex aromatic profile and, crucially for a Metodo Classico, to maintain a crystalline acidity. AlpeRegis Brut is a Trentodoc Millesimato, aged for at least 36 months. Made exclusively from Chardonnay grapes, the grapes are selected exclusively from the most suitable vineyards and harvested strictly by hand. In the glass, AlpeRegis Brut has an elegant golden yellow colour and a very fine, persistent perlage that seems to go on forever. The impact on the nose is fascinating: the harmony of ripe yellow fruit prevails, with Golden apple and pineapple, and citrus nuances that immediately bring freshness. But it doesn't stop there: the long contact with the yeasts gives it that distinctive note of bread crust and dried fruit, almonds and hazelnuts, which envelops the bouquet. On the palate, it is dry and mineral, but at the same time creamy and gentle, thanks to a skilfully calibrated sugar dosage. The excellent alpine acidity cleanses the palate and makes it incredibly fragrant and persistent. It leaves a beautiful savoury trail, an invitation to another sip. Excellent as an aperitif, its freshness makes it a companion for the whole meal that is not afraid of challenges. Try it with raw seafood and sushi, seafood risottos and refined white meats.
