Nature, when respected, gives juicy, rich fruit. It's man's job not to screw it up. They know it well at Concilio, where the grapes that have reached perfect ripeness are delivered and processed with the utmost respect. Harvest by hand and modern vinification, with strict control of temperature and cleanliness. After the first fermentation, the wine rests on its lees for at least 3 to 4 months before drawing. Then, in the spring, the cuvée which will be started for the second slow fermentation in the bottle is created. From that moment, no less than 30 months pass before you can enjoy your first bottle of 600UNO Brut. In the glass the colour is golden, covered by a lively but fine froth. The aroma is complex and elegant, fragrant of fruit with notes of yeast. In the mouth it is fresh, creamy and well structured.
Almost 70 years have passed since 1956, when eleven Trentino farmers decided to join forces to found the city's Cantina Sociale. The precise date is 17 October and the official documents state: 'the object of the Society is the moral and economic improvement of its members by promoting, through appropriate initiatives, the increase of their wine production and by providing for the processing and joint sale of the product'. Today, as then, unity is strength and aggregation in a cooperative structure allows even the smallest producers to face the market and profit from it.
