"Zell" TrentoDoc Brut

Zell is defined as a jewel of the Trentino region. An excellent Metodo Classico Brut TrentoDOC, made from selected Chardonnay grapes that come exclusively from vineyards in the Zell area. We are in a hamlet of Trento that lies about 500 metres above sea level. Vineyards arranged in a gyropoggio pattern, on a large natural terrace facing south, towards the Adige Valley. Harvested strictly by hand in small crates, the grapes are picked slightly earlier than fully ripe to preserve their acidity and freshness. The base wine is vinified in stainless steel at a controlled temperature. Then, in March, the masses are tasted and the best are used to make up the cuvée destined for drawing. Zell remains on the lees for at least 36 months before remuage and dégorgement. Intense straw yellow in colour, in the glass it reveals a dense, fine and persistent perlage. The nose is elegant, fruity and fragrant, with a slight hint of yeast. In the mouth it is fresh, mineral and structured. An excellent sparkling wine for the whole meal, it is a brilliant accompaniment to an appetizer or a fish dish.
