The soils, carefully chosen according to the vintage between 250 and 800 metres above sea level, are equally clayey and calcareous, giving the grapes power and minerality. Only part of the wine is fermented in barriques, so that the wood notes impart only a delicate aromatic and olfactory richness to the base, while maintaining balance and freshness. In the cellar, the wait becomes magic: the particular curvature of the bottle, which gives the yeast deposits a reduced surface area, results in an even slower organoleptic evolution. A prolonged rest for many months enriches the sparkling wine and ennobles its aromas, magnifying its union with the liqueur d'expédition, the secret of the Cantina: Flavio is born.
