Cáralis is a Brut sparkling wine proposed by Cantina Sociale di Dolianova. A bubbly, therefore, from a warm and unusual territory. A good opportunity to experience something truly unprecedented. The base is Chardonnay from vineyards just a few kilometres from the winery. A place characterised by a sub-arid climate. After harvesting, the must obtained by soft pressing is immediately cooled and then separated from the lees by static sedimentation. Thus begins the first fermentation, induced thanks to the inoculation of selected yeasts. Once the first fermentation is complete, the base wine is sent to the second fermentation in an autoclave. At the end of this process, the sparkling wine remains in contact with its yeasts for some time, acquiring greater complexity and richness of taste. Only then is it finally bottled. Pale straw colour with greenish reflections, the glass is furrowed by millions of bubbles rising quickly to the surface. The nose reveals an elegant, intense bouquet with fruity notes. In the mouth, however, it is pleasantly lively, with good body and a pleasant floral freshness. Ideal as an aperitif, it pleasantly accompanies fish hors d'oeuvres and seafood crudités.
Founded in 1949 by thirty-five winegrowers, Cantine di Dolianova has grown and prospered over time, reaching goals that were certainly not even remotely imaginable at the time. Today there are more than three hundred members and, very importantly, many of them are now the children or grandchildren of the founding members. In a sort of generational passage, much appreciated in the wine world. Today, the Cellars can therefore count on a heritage of around 1200 hectares of their own vineyards, mostly concentrated in Parteolla, in the south of Sardinia, one of the sunniest parts of the island. Thanks to this heritage, the company's sales force is able to sell more than four million bottles a year. Numbers that, in a viticultural panorama such as that of Sardinia, make Dolianova one of the largest and most virtuous realities in the sector. The winery's production is focused (as it should be) on the island's many indigenous grape varieties. From Cannonau to Monica, Nuragus, Vermentino, Nasco, Barbera Sarda and Moscato.
