  • Sensations A complex and elegant bouquet, with a mix of citrus and tropical fruit aromas such as lime, grapefruit, pineapple and pear, accompanied by delicate notes of minerals and herbs. Elegant with vibrant acidity that maintains the typical freshness of the variety. The citrus notes again show a tendency towards a mineral finish that adds complexity to the wine.
  • Vinification The must was protected from oxygen during the entire fermentation process. "Cold maceration before fermentation lasted between 12 and 14 hours in order to allow greater contact with the skins. The slow fermentation with permanent temperature control between 12 ?C and 15 ?C allowed the characteristic fruity and mineral aromas of this variety to be extracted. The wine remained in contact with the lees for three months after fermentation, with a slow batonnage to maximize the contact with the lees thus obtaining more body and complexity. To intensify the fruity character typical of this variety, the wine was not aged in oak.

    Dos Almas Sauvignon Blanc Casablanca Valley
  • The sandy soil of the Casablanca Valley is ideal for the cultivation of Sauvignon Blanc. Harvesting generally takes place at night to best preserve the fresher, finer aromas of the original grapes. For the same reason, vinification is carried out in the absence of oxygen, preventing the grapes from oxidizing and losing the freshness that distinguishes the bouquet of this wine. Three months of prolonged contact on the lees, however, contribute to making the wine richer and more pleasant to taste. In the glass it has a lovely soft greenish yellow colour, with notes of citrus fruits, such as lime and grapefruit, combined with hints of tropical fruit, pineapple and pear. The taste is mineral and elegant, well supported by a pleasant acidity.

    Dos Almas is a Chilean winery with an Italian heart, since it is part of the large Zonin1821 wine group. An ambitious project that sees the main winery in Veneto engaged in the development of a new brand, destined to soon carve out its space on the international market. Chilean wines, territories very different from those we are used to knowing, but Italian style. Given that the winery is supervised directly by winemaker Stefano Ferrante, author of many of the wines produced on the various Zonin estates. The winery owns parcels of land in three different Chilean production areas, each with distinctive traits: in the Colchagua area, about 160 miles south of Santiago; in Casablanca, west of Santiago and towards the Pacific Ocean; and in the Maipo area, a historic wine region and home of Chilean Cabernet.
