"Governo all'uso Toscano" Toscana IGT 2021

Lovers of tradition, step forward. This is, in fact, a modern wine made using an ancient traditional technique. One of those gems that you study when you attend the sommelier course but that you don't often get to try live. The so-called "governo all'uso toscano" was once used to give Tuscan reds a burst of fruit and a bit of verve. In practice, it is a second slow fermentation that takes place at the end of the usual alcoholic fermentation. In this case, however, it is not achieved by adding yeast, but must obtained from part of the grapes dried immediately after the harvest. Uggiamo makes this Toscana IGT with a blend of 90% Sangiovese grapes and 10% Canaiolo. Grapes harvested by hand in boxes and carefully selected to ensure that only the healthiest bunches are brought to the winery. The result is a ready-to-drink red wine, characterised by a beautiful intense colour and an inviting fruity bouquet. In the mouth, then, thanks to the practice of 'Government', you discover a pleasantly lively and fruity wine. It is the wine with which to accompany a tasty snack. Salami, cheese and Tuscan crostini are "its death".
