Keeping the parcels separate, alcoholic fermentation and maceration take place in stainless steel tanks for 3–4 weeks at controlled temperature up to a maximum of 28°C. Spontaneous malolactic fermentation follows. Ageing: About 85% of the wine matures in French oak barriques, both new and used, while the remaining 15% ages in stainless steel for a total of around 12 months.

    • Il Pino di Biserno is a red wine that carries the unmistakable charisma of a territory still waiting to be fully discovered. We are in Bibbona, a corner of the Alta Maremma bordering the famous Bolgheri area. Here stands Tenuta di Biserno, an ambitious project by brothers Lodovico and Piero Antinori. If Bolgheri represents classic elegance, Bibbona expresses the raw strength of nature among hills overlooking the sea. It is said that when Lodovico Antinori explored these lands at the end of the 1990s, he immediately realised that the combination of sea breezes and soil composition could give birth to something extraordinary. And that is exactly what happened. The blend behind this red is a perfect interplay of international varieties that have found a welcoming home here. Cabernet Franc and Cabernet Sauvignon dominate with 35% each, providing structure and deep varietal aromas. Merlot contributes 20% to soften the edges with its roundness, while 10% Petit Verdot adds the peppery spice and deep colour that complete the picture. The grapes pass along a vibrating sorting table for strict selection: only perfect berries continue forward. Fermentation then takes place in stainless steel tanks, keeping the parcels separate to respect the identity of each vineyard block. After spontaneous malolactic fermentation, the wine begins its ageing journey: 85% rests for 12 months in French oak barriques, while the remaining 15% stays in stainless steel to preserve the freshness of the fruit. Intense and bright ruby red with purple reflections; on the nose an explosion of Mediterranean scrub, spices and ripe black fruits with a very discreet toasted background. On the palate it is enveloping and muscular yet supported by a freshness that keeps the sip agile. The tannins are incredibly smooth and the finish seems endless. Perfect to try with rosemary grilled steak or with wild boar stew typical of the region.

      Tenuta di Biserno is a prestigious winery in the Tuscan Maremma, founded in 2001 by brothers Lodovico and Piero Antinori together with their nephew Niccolò Marzichi Lenzi and Umberto Mannoni. Located in the municipality of Bibbona, it borders the famous Bolgheri area to the north. The estate covers about 40 hectares with extremely varied soils characterised by clay-limestone alluvial terrain rich in calcium carbonate and pebbles. Here varieties such as Cabernet Franc, Merlot, Cabernet Sauvignon and Petit Verdot are cultivated, finding in the climate and natural conditions of the area the perfect environment to express their best qualities. The varied exposures and the influence of the nearby sea are key factors in producing great wines appreciated for their uniqueness, authenticity and recognisability.
