This Toscana IGT Le Difese is a bit like its younger brother, based on 70% Cabernet Sauvignon and 30% Sangiovese. Processing begins with careful hand selection of the grapes, followed by soft pressing and destemming of the grapes. Fermentation in stainless steel at a controlled temperature, without the addition of external yeasts. This is followed by the malolactic fermentation phase, also carried out in stainless steel, which ends in mid-November. At the end, the wine is left to age for about 8 months in French oak barriques, third passage after Sassicaia. Ruby red in color, the nose reveals a nice olfactory profile, characterized by a certain fruitiness followed by a nice floral tone. In the mouth it is pleasantly spicy, with slightly balsamic notes. Enveloping and fine, fresh and elegant. The beautiful tannic texture is perfectly integrated and opens to a finish of excellent cleanliness and persistence.
