"Fola" Cannonau di Sardegna Riserva DOC 2020

In the Gallurese dialect, Fòla is fable. A more than apt name for what the technicians at the Siddùra winery define as 'the essence of Cannonau'. This red wine of great character is produced from grapes from vineyards that the winery follows directly from the agronomic point of view, monitoring the ripening of the skin and the gradation through sensory and laboratory analyses. A pure Cannonau, this vine has found its ideal habitat in Sardinia, giving life to wines that are rightly defined as the 'prince of the island's reds'. A complex wine, warm and rich in extract. Cannonau di Sardegna DOC Riserva, Fòla comes from vineyards located at about 300 metres above sea level, from vines that are trained partly with the spurred cordon system and partly with the traditional sapling system. The grapes are harvested by hand, carefully selected, then destemmed and macerated for a medium-long period. Subsequent barrel ageing completes the rich organoleptic picture. With its over 15 degrees alcohol, it is undoubtedly a wine of great longevity. Served today, however, in the glass it has a beautiful ruby red colour, with rich and intense aromas. In its bouquet it is easy to distinguish well-ripened red and dark fruit, such as plum and black cherry. Then spicy notes and a finish of unripe cherries. In the mouth, however, one discovers a pleasantly warm and smooth wine. A harmonious red, with good aromatic persistence and a silky tannic texture. An important wine that calls for a very substantial pairing. Excellent with savoury meats, such as wild boar, or with the most classic of grilled bone-in steaks.
