  • Sensations An unprecedented Prosecco, rich in character, dry and iodised, aged in the depths of the sea of Trieste, in a protected area forbidden to navigation. Straw yellow with green reflections to the eye, it releases an extraordinarily fine and compact perlage. White flowers and savoury white-fleshed fruit envelop the nose with their attractive bouquet. On the palate, each sip unfolds a strong personality and the unprecedented minerality of the Glera grapes grown in the Karst area in the province of Trieste.
  • Vinification Glera grapes are used in the production process of Prosecco AUDACE. The grapes were cooled before and during pressing to preserve freshness and varietal aromas. Second long fermentation of ninety days in autoclave. Maturation at sea over four months at -20 m, in the waters of the Gulf of Trieste, in the absence of light, with a high concentration of chlorophyll (as an index of biomass) and a pressure of approx. 2 atmospheres.

  • Glera vines in the province of Trieste are rare that boast the special mention Prosecco DOC Trieste. From one of these comes Millesimato Extra Brut Audace, the first Prosecco DOC Trieste aged in the waters of the upper Adriatic - in the Gulf of Trieste. The name is evocative of the famous Trieste pier called 'Audace' in memory of the landing of the first Italian military ship, the famous destroyer. This walkway suspended over the sea is now one of the most famous in Italy and the privileged stage of the world's largest sailing regatta, the Barcolana. A production limited to 6,492 bottles, this interesting wine matures at a depth of 20 metres, with extraordinarily peculiar parameters of temperature, salinity, concentration of dissolved oxygen, presence of phosphates, silicates, nitrites, nitrates and chlorophyll. All these natural parameters change with the seasons and the passage of the winds, guaranteeing Audace Trieste's unique taste and character. In addition, the Bora and Scirocco generate significant sub-inertial oscillations that contribute to the continuous movement of the bottles. This continuous rocking ensures a very special evolution of the wine. 100% Glera, the grapes are cooled before and during pressing to preserve freshness and varietal aromas. The second fermentation then continues for around ninety days in autoclaves. The result is a Prosecco rich in character, dry and iodised. Straw yellow in colour with green highlights, the perlage is extraordinarily fine and compact. On the nose, white flowers and fresh white-fleshed fruit. In the mouth, however, each sip reveals a strong personality and an unprecedented minerality. This is certainly due to the Glera grapes, grown in the Karst area in the province of Trieste. Excellent as an aperitif, it is a perfect bubbly to accompany the entire meal. Perfect with shellfish and seafood dishes.
