Vin Santo Valdichiana Toscana DOC 2020

Vin Santo della Valdichiana DOC is a precious wine that belongs to the Tuscan tradition. Always a companion for festivities, great occasions and conviviality, it is the result of a long process that involves drying the grapes, Malvasia and Trebbiano Toscano. Harvesting takes place directly in the drying trays to optimally preserve the integrity of the bunches. The actual drying process then lasts a few months, to concentrate the sugar in the grapes and thus obtain a scarce but very sweet must. This was then transferred into oak barrels where alcoholic fermentation took place, which ended spontaneously when the wine reached 12.5 degrees alcohol, preserving a natural residual sugar content. Finally, after an ageing period of several years, the wine is bottled and is ready to go on the market. Vin Santo Santa Cristina presents itself in the glass in an intense yellow colour with amber highlights. On the nose, traditional pastry aromas stand out with notes of sultanas, apricots, candied fruit and hints of macaroons. The palate is full-bodied and soft, with a distinct hint of apricots in syrup. Pleasant and balanced finish. Perfect with desserts and blue cheeses.
