Planeta's Etna Bianco DOC Contrada Taccione is a perfect example of how the power of the volcano can be transformed into freshness and character in the bottle. But let's proceed in order. We are about 700 metres above sea level, on the northern slope of Mount Etna, in the Taccione district. Here, the volcanic soil is rich in sand and lava stones, and there is a significant temperature difference between day and night. These conditions help the vines to ripen slowly, preserving their acidity and intense aromas. In this area, “nevère” were traditionally built, ancient stone pits where snow was stored during the winter to be used throughout the year. Etna Bianco DOC is a blend dominated by Carricante with a small percentage of Catarratto. Together, they best express the volcanic identity of the soil. The grapes are harvested manually in mid-October, with great care taken to select the best bunches, which are destined to preserve balance and structure. In the cellar, vinification is guided by a desire to respect the purity of the fruit. It starts with temperature-controlled fermentation in stainless steel to keep the fresh, aromatic notes intact, followed by ageing, also in steel, to enhance the minerality without weighing down the fruit. The altitude and care in the vineyard do the rest, with moderate yields that concentrate the essence of the lava soil. In the glass, it has a beautiful light, bright straw colour. The nose offers a delicate and fragrant bouquet, with hints of fresh citrus, green apple and a hint of aromatic herbs such as sage. The palate is lively, with a fresh and savoury texture reminiscent of flint and a clean, long finish that leaves a pleasant sensation of balance and lightness. It is perfect with simple, refined seafood dishes, such as baked sea bream with lemon and rosemary, or grilled vegetable appetisers. It is interesting when paired with fresh soft cheeses, such as ricotta, which finds an ideal partner in the wine's lightness.
