Sul Vulcano di Donnafugata is a white wine that highlights the mineral and pure soul of Etna. The territory is the absolute protagonist here, right from the first sip. The vineyards on lava stone terraces at 730–750 metres above sea level, the cool climate and the large temperature variations create a unique terroir, full of tension and vitality. Manual harvesting and selection of the grapes also guarantee quality. Temperature-controlled fermentation in steel tanks keeps the aromas of Carricante intact. This is followed by partial ageing in second and third passage barriques, which gives the finished wine a balanced softness without masking its mineral character. In the glass, it has a beautiful straw yellow colour. The nose is striking for its beautiful combination of fresh fruit, Mediterranean herbs and flinty notes that define its personality. On the palate, however, it is fresh and savoury, with a marked minerality and good length. Vulcano is already enjoyable today, thanks to its youthful freshness. However, its structure and light wood allow it to grow in complexity even after 5-7 years of proper cellaring. With time, more evolved notes will emerge, with hints of hay, almond and light spice. In any case, it pairs well with shellfish, seafood risottos, porcini mushrooms and sophisticated vegetarian dishes. It is also excellent with grilled or baked fish. A white wine with character, fresh but structured, which expresses the power of Etna in every sip.

She is the real “donnafugata” (woman on the run) who abandoned her teaching job to devote herself full-time to the vineyards of Contessa Entellina.
