    "PaxMentis" Bianco Terre Siciliane IGT 2022
    • A journey into the heart of one of the most interesting wine regions in the world: Sicily. Today we travel to the heart of western Sicily, to Gibellina, where Tenute Orestiadi's PaxMentis Bianco is produced. We are in the infamous Belìce Valley, marked by the 1968 earthquake, now a symbol of rebirth, where contemporary art blends with the winemaking tradition. Here, the Mediterranean climate, with hot, breezy summers, promotes optimal ripening of the grapes. PaxMentis Bianco, in particular, is made from a blend of Viognier and Chardonnay grapes. The uniqueness of this wine lies in the partial drying of the grapes, a technique that concentrates the sugars and aromas, giving the wine greater complexity and structure. After harvesting, the grapes undergo a brief drying phase, followed by temperature-controlled white vinification. The result is a wine characterised by a bright golden yellow colour. The nose is intense and complex, with notes of tropical fruit, candied citrus and floral nuances. On the palate, however, it is soft, enveloping and well-balanced, with a pleasant freshness that balances the aromatic richness. A versatile wine, it is ideal as an aperitif or paired with fish dishes. Excellent with seafood and soft cheeses. Some also recommend it with Asian cuisine, such as sushi and sashimi... Tenute Orestiadi represents a journey through completely different terroirs, with rich and varied characteristics. With one common denominator: the ability to enhance the native grape varieties. Then, in 2018, thanks to shared values and the same love for the land, Tenute Orestiadi began a collaboration with a beautiful winery on Mount Etna, La Gelsomina.
