Kemar, Catarratto Sicilia DOC from Tenute Orestiadi is a white wine with great character, made from one of the most interesting native grape varieties in the region. We are in the heart of the Belìce Valley, in the hinterland of Trapani. This area is characterised by “white soil”, which gives the wine a distinct minerality and freshness. The dry microclimate, with good water retention, further enhances the unique characteristics of Catarratto, known for its versatility and ability to express the characteristics of the terroir to the fullest. The grapes are harvested by hand between the end of August and the beginning of September. They are destemmed and gently pressed. Fermentation takes place at a controlled temperature with the addition of selected yeasts, without malolactic fermentation, to preserve the wine's freshness and aromas. The wine is then aged for 3 months in steel tanks and then for at least 4 months in the bottle. It has a beautiful bright and intense straw yellow colour. The nose is fruity and floral with notes of white fruit, green apple, peach, apricot and hints of almond, orange blossom and broom, typical of the Mediterranean scrub. On the palate, it is distinguished by its elegance and excellent balance between freshness and softness. Kemar pairs well with fish-based first courses, delicious fried foods, oysters and grilled prawns. It is also perfect as an aperitif or accompanied by light and fresh appetisers.
