Mandrarossa Chardonnay, Sicilia DOC, is produced in Menfi, Sicily. This area, located on the south-western coast of the island, is characterised by calcareous, medium-textured soils, with vineyards facing south and south-east between 150 and 350 metres above sea level. The climate here is decidedly Mediterranean, with hot, long summers. However, the sea breezes promote optimal ripening of the grapes, giving the wine a balanced structure and intense aromas. 100% Chardonnay, the harvest begins in the second week of August, when the grapes reach full phenolic ripeness, ensuring optimal concentration of aromas and freshness. After harvesting, the grapes undergo cryomaceration for 4-6 hours and then the must ferments for 15-20 days at a controlled temperature. The wine then ages for 4 months in stainless steel tanks. In the glass, it is straw yellow in colour with golden-green reflections. The nose reveals an intense bouquet with hints of orange peel, oleander and ripe prickly pears. On the palate, it is powerful and enveloping, with a marked minerality and persistence. This beautiful Sicilian Chardonnay pairs well with fish-based first courses, roasted prawns and seafood in general. It is also excellent with vegetable dishes and white meats.

Designed to blend in with its surroundings, the winery uses natural materials and colours that reflect the tones of the local area, such as wood and ochre pigments. The roof garden, covered with typical Mediterranean plants, acts as a natural insulator, helping to maintain ideal temperatures and humidity levels for ageing wines. The energy required is provided by a photovoltaic system, underlining the company's commitment to environmental sustainability. The company also stands out for its adoption of organic farming practices. Since 2021, it has been offering wines made from 100% organic grapes, sourced from vineyards cultivated without the use of synthetic products or GMOs, promoting biodiversity and the well-being of the ecosystem.
