    "Jalé" Chardonnay Sicilia DOC 2023
    • A sip of Sicily at high altitude! Cusumano's Jalé Chardonnay DOC Sicilia is just that. 700 metres above sea level: this figure is not just a number, but the key to understanding the uniqueness of this wine. The Chardonnay vineyards from which Jalé is made are located in a hilly area, where the altitude creates a particular microclimate. The temperature variations between day and night, typical of these altitudes, favour a slow and gradual ripening of the grapes, concentrating their aromas and acidity. The clayey soil also gives the wine structure and minerality. Production begins with the cold maceration of the grapes and the subsequent static clarification of the must. Fermentation takes place in 225-litre oak barrels, where the wine remains for about 6 months. This stage gives the wine aromatic complexity and a slight woody note. The ageing process ends in the bottle, where the wine rests and evolves further. An intense straw yellow colour with golden reflections that sparkle in the glass, the nose is an explosion of aromas: candied citrus fruits and pineapple that blend with notes of vanilla, cinnamon and sweet spices. Warm hints of flowers in alcohol complete the bouquet. In the mouth, the wine is rich and smooth, with a pleasant freshness and a remarkably long-lasting aroma. This Chardonnay is meant to be appreciated in its youth, perfect as an aperitif or to accompany a fish-based menu. It goes well with seafood appetisers, fish and shellfish-based first courses, and baked or grilled fish.
