Also recommended with raw fish (langoustines and oysters), it is the ideal companion for crispy tempura, both sea and land. Serving temperature: 8-13°C.

    "Santa Gemma" Chardonnay Salento IGT 2024
    • Santa Gemma, Salento IGP Chardonnay from Produttori di Manduria, is a fine international white wine that comes from a selection of grapes from the winery's contributing members' vineyards with an average age of around 20 years. These plants are perfectly acclimatised and capable of producing fruit of excellent quality. The grapes reach perfect ripeness in the first half of September, when they have the right concentration of sugars, without having lost their characteristic freshness. Once in the cellar, the grapes are then subjected to a fast white vinification in temperature-controlled steel tanks. At the end of the transformation, the wine is then passed into French oak barriques where it has time to mature slowly for no less than 5 months. The result is an elegant white, characterised by a straw-yellow colour with faint golden hues. On the nose, exotic fruit, enriched by buttery and vanilla notes conferred by the ageing in wood. In the mouth, however, it reveals a perfect balance between freshness and softness. Intense and dry, it is a pleasantly sapid wine characterised by a long, indeed very long, elegant finish. Perfect with structured first courses, but also tasty seafood soups. Excellent with raw foods, it is the ideal companion for crispy tempura, whether sea or land.
