Edda, meaning ‘she’ in the Salento dialect, is the sensual feminine soul of San Marzano. Bianco Salento IGP is the result of careful processing of grapes supplied by skilled local farmers. It is mainly Chardonnay, but with the addition of a blend of native white grape varieties. Aged in contact with its noble yeasts in French oak barriques for 4 months, the wine undergoes weekly bâtonnage throughout this period, which keeps the yeasts in suspension and increases the complexity of the finished wine. Full of Mediterranean charm, this Apulian white wine has a solid acidity, intertwined with an enveloping and elegant warmth. Savoury and mineral on the palate, it is a wine characterised by a beautiful finesse and great longevity. Straw yellow in colour with golden reflections, it reveals a floral and fruity bouquet on the nose. On the palate, however, it is opulent but also fresh and delicate. A wine with great personality, it can easily be served throughout the meal. Excellent with classic seafood appetisers, for example, it also pairs well with fish-based first courses and fresh cheeses.
