In life, you need a little ‘common sense’. This Catarratto from Tasca d'Almerita is proof that simplicity, when backed by a unique history and terroir, can be a winning choice. An honest, no-frills white wine. A sip of authentic Sicily that can be appreciated without the need for lengthy explanations. We are in Regaleali. Here, Catarratto, once considered a secondary grape variety and often used for blending wines, finds its consecration. Grown on slopes reaching an altitude of 900 metres, this grape variety benefits from an exceptional microclimate. The cool air that comes from these heights, even in the height of summer, slows down the ripening of the grapes and preserves their acidity and more delicate aromas. The harvest, one of the latest on the estate, takes place even after the reds, allowing the Catarratto to reach perfect ripeness. The result is a wine that differs from the heavier, more oxidative styles typical of coastal areas. To achieve this, the vinification process is designed to enhance the freshness and aromatic integrity. The grapes are harvested by hand, gently pressed and the must is fermented in temperature-controlled steel tanks for about 18 days. Obviously, malolactic fermentation is not carried out, but after fermentation, the wine is aged for four months in steel tanks, remaining in contact with its yeasts. This phase enriches the wine with complexity and structure, without altering its purity and spontaneity. Straw yellow in colour, bright and clear, it opens on the nose with a delicate and inviting bouquet: a mix of citrus notes of pink grapefruit and lime blend with hints of white peach, wild flowers and a hint of green tea. On the palate, it is refreshing, thanks to a beautiful vibrant and savoury acidity, combined with an almost salty minerality that cleanses the palate. The taste is balanced and persistent, with a return of fruity hints and a pleasantly clean finish. An ideal wine for hot days or for a dinner with friends. Buonsenso is extremely versatile but goes wonderfully with fish, especially cold or hot seafood starters, but also with a nice mixed fry or grilled fish.
