"Les Quatre Saisons" Cremant de Bourgogne Brut
    • You do not necessarily need to look towards Champagne to enjoy sparkling wine of outstanding quality. This Crémant de Bourgogne by Maison Paul Chollet proves exactly that. Founded in 1955 in the beating heart of Savigny-lès-Beaune, this estate sits among vineyards that seem to cling to the hillsides with old-fashioned determination. The climate is continental, with harsh winters and generous summers that allow the grapes to ripen slowly while preserving the vibrant acidity that lies at the heart of every great sparkling wine. A curious anecdote concerns the very name “Crémant”. It was once used to describe Champagnes with a softer, almost creamy mousse, but since 1975 it has become the noble title reserved for French sparkling wines produced outside the borders of the Reims region, with Burgundy proudly claiming qualitative supremacy. Les Quatre Saisons is a masterful blend that tells the story of Burgundy’s biodiversity: Pinot Noir (60%) brings structure and body, Chardonnay (30%) adds finesse and floral aromas, while small percentages of Aligoté (5%) and Gamay (5%) contribute that touch of salinity and fruity freshness that makes the sip dynamic and never ordinary. Yet it is the second fermentation in bottle that truly makes the difference: ageing on the lees lasts several months, a long period that transforms coarse bubbles into an exceptionally fine and persistent mousse. This slow maturation allows those fragrant notes to develop, making every sip irresistibly inviting. In the glass it appears luminous straw yellow, almost brilliant. On the nose, a clean weave of white flowers, russet apple and delicate hints of fresh pastry. On the palate it reveals vibrant freshness supported by a creamy, enveloping texture. The finish is savoury, almost mineral, leaving the mouth perfectly clean and ready for another sip. This is a sparkling wine that does not need to shout in order to be noticed, because its elegance speaks for itself. It pairs beautifully with refined dishes such as battered courgette flowers, but is equally perfect with seafood risotto, where the wine’s minerality enhances the sweetness of the shellfish.

In the heart of the Côte Chalonnaise, in Savigny-lès-Beaune, lies Maison Paul Chollet, a name that for lovers of Crémant de Bourgogne represents a guarantee of elegance and precision. Founded in 1955, this winery has succeeded in carving out an important place for itself in a region dominated by the great names of still wines, choosing to specialise in what they call “the art of perlage”. Unlike many producers who make sparkling wines merely as a “complement” to their range, here Crémant is the undisputed protagonist. The Chollet family has always believed that Burgundy’s terroir possesses everything required to compete with the more celebrated neighbours of Champagne, provided that uncompromisingly high quality standards are respected. The Maison’s vineyards are located in a privileged position. The Côte Chalonnaise is a narrow strip of land where limestone soils and ideal sun exposure create the perfect conditions for grapes with vibrant acidity, an essential element in producing sparkling wines that are balanced and never flat.
