    • The strength of Pinot Noir when it chooses to dress in white. This Crémant de Bourgogne Blanc de Noirs by Paul Chollet is the very essence of pure Burgundy. A wine that needs no introduction because it speaks the language of structure and precision. We are in Savigny-lès-Beaune, a corner of France where time seems to have stood still among dry-stone walls and gentle hills. Here Maison Paul Chollet has been writing its story since 1955. The Chollet family has always believed that Crémant should never be considered a second choice, but rather a true excellence. A local anecdote tells that the monks of these lands were among the first to recognise the potential of black grapes vinified as white wine. This Blanc de Noirs is born from limestone and stony soils that force the roots of Pinot Noir deep underground, giving the wine a minerality that tastes of earth and rock. It is a constant challenge against the elements, one that Paul Chollet wins with every harvest. As mentioned, Pinot Noir is the soul of this Blanc de Noirs. A noble and temperamental grape variety that finds its highest expression in Burgundy. In this sparkling version, it gives the wine a power and structure rarely found elsewhere. The first fermentation takes place in stainless steel tanks, where the base wine rests for six months to find its initial balance. The real leap in quality, however, comes afterwards during the second fermentation in bottle. The wine ages on its lees for a minimum of 18 months. This long rest in the cool darkness of the cellar transforms the texture of Pinot Noir into something silky. There is no rush within these walls. Time is the secret ingredient that makes the bubbles as fine as silk thread. Antique gold with reflections shading towards copper. On the nose it is rich and complex. Notes of small red berries, hints of freshly baked bread crust and touches of toasted almond. On the palate it is broad and enveloping. A wine that grabs hold of life. The structure is powerful, yet the citrus freshness on the finish keeps the sip incredibly agile. A sparkling wine with real character, one that knows exactly how to command respect at the table.
