Calabrise, Calabria IGT Rosso, offered here by Ippolito 1845, is a fresh and fragrant wine made from 100% Calabrian grapes. The harvest, strictly manual, takes place quite late in the year, even at the beginning of October. The grapes, delivered early to the cellar to be processed, undergo a long pre-fermentation maceration to best extract colour and aromas. Then, after racking, the wine matures for about seven months in temperature-controlled steel vats to preserve the fragrance of the fruit. This reveals a wine characterised by a beautiful intense red colour with violet reflections. On the nose, hints of red and dark fruit, such as plum and black cherry, and black pepper. In the mouth, it is fresh, pulpy and well characterised by soft, ripe tannins. An excellent companion for snacks, with cold meats and cheeses, as well as tasty meat-based main courses.
