  • When the climate becomes hot, as is often the case in Puglia, to cultivate grapes we often resort to the ancient folk wisdom that the vine must grow low, ripening its clusters close to the ground, to benefit from even the slightest coolness from the earth. The traditional espalier system is therefore preferred to the modern espalier. Beautiful to look at and effective in terms of the quality produced. But very, very tiring for those who have to take care of it. Every operation, in fact, must be carried out manually, without the help of any machine. Giustini offers this Acinorè, 'Old Vines'. This is a Primitivo di Manduria DOC, made from grapes cultivated in the Alberello style. A living heritage that the company preserves, protects and is committed to enhancing. Acinorè, in fact, represents the best interpretation of Primitivo proposed by the winery. Harvested - obviously - by hand, after destemming and pressing the maceration period lasts about 15 days, followed by alcoholic fermentation and a long period of maturation in French oak barriques. This reveals a wine characterised by a beautiful, intense ruby red colour, with complex aromas reminiscent of well-ripened red and dark fruit. Then vanilla and even chocolate. In the mouth it is full, soft and balanced. An important red, the kind that requires a dedicated menu. Very tasty first courses and meats subjected to long cooking.     Wine: a family affair. At least for the Papadopoli family, Apulian wine producers who are justifiably proud of their origins. The winery is located in a middle land, between the sea of Taranto and the heights of the Valle d'Itria. Here is San Giorgio, a small town that falls within the Primitivo di Manduria DOC area. And it is here, for no less than four generations, that the family has handed down traditions, experience and passion for wine from father to son. The seed was planted in 1991 when Giuseppe Papadopoli, after spending years managing the vineyards of some of the most productive companies in the area, felt that the Apulian wine market was changing. Thus the first hectares were purchased, marking a turning point. The name chosen was that of the district of the first vineyards, Giustini precisely. From then on, from label to label, from success to success, the activity of the fine Taranto company has never come to a halt. And the good wines on offer today are there to prove it.
