  • Cleto Chiarli proposes this interesting Lambrusco Bio. 100% Grasparossa di Castelvetro DOC, this interesting sparkling wine is the result of careful processing of grapes harvested when fully ripe. Traditional pressing with 36 hours maceration, followed by a first fermentation at controlled temperature. At the end of this first phase, the wine is aged for at least two months in vats and only then is it transferred into autoclaves for the delicate frothing process. The result is a very pleasant sparkling wine with a beautiful intense red colour. The impression on the nose is strong. The most typical aromas of the variety stand out, from red to darker fruit, with an intriguing spicy base. Soft and aromatic on the palate, this Lambrusco goes perfectly with first courses, roasts, tasty cheeses and fish, roasted or stewed.
