I like this Raimat El Cim del Turò Brut, a fun Cava proposed by Bodega Raimat. It appeals for its traditional nature, being made from Chardonnay and Pinot Noir grapes, therefore from an uncommon cut for a Spanish sparkling wine, and it appeals to those who are environmentally and sustainability conscious, since it is a certified organic wine. Produced using the Metodo Classico method, this wine remains in contact with its yeasts to mature in the bottle for a period of no less than 18 months. The result is a fresh and immediate sparkling wine, good right away and capable of enhancing a menu based on fish, with simple and not too intense dishes. Excellent with an appetizer of raw fish, for example, but it also goes very well with a good seafood spaghetti allo scoglio. It does not lack versatility. In the glass, it has a straw yellow colour with greenish reflections. The nose reveals lively aromas of citrus, green apple and apricot. The refreshing notes of citrus, green apple and sweet melon return in the mouth. Its creamy texture and distinct acidity make it well balanced and ensure a long, lingering finish.
