Another fine product from Apollonis, a unique company. In fact, its founder, a certain Michel Loriot, likes to call himself a melomaniac winemaker, because of his habit of playing classical music in the vineyard and in the cellar to promote the growth of the grapes and the ripening of his wines. Genius or madness? It matters little, as long as the wines are always of a high standard. Like this Théodorine Rosé, made with grapes from the famous Vallée de la Marne. The base blend is composed of 35% Meunier, 35% Pinot Noir and 30% Chardonnay. All of the Apollonis winery's grapes come from vineyards with an average age of 35 years. A traditional vinification, this Théodorine Rosé matures slowly in the cellar. After taking the foam, in the bottle, the wine rests for about 3 years in the bottle before final disgorgement. This reveals a beautiful glass characterized by a salmon-pink color, with fine and persistent perlage. On the nose, notes of strawberry and raspberry, floral hints and a hint of cinnamon. In the mouth it is fresh and savory without lacking in balance. The finish is long and fresh, with a distinct citrus reminder. Excellent as an aperitif, this Apollonis rosé pairs well with shellfish and seafood. Good, in general, with fish-based first and second courses.
