We are in northern France, in a wine region that is unique in the world for its climate and soil composition. The calcareous soils of this area retain moisture and reflect sunlight, giving the plants the ideal conditions to develop pronounced acidity. The harshness of the continental climate, characterised by severe winters, puts the vine to the test. From this constant challenge of nature come grapes endowed with simply unrivalled elegance and freshness. The signature of this cuvée lies precisely in the “geometrical” balance of its grape varieties. There is 33% Chardonnay for finesse, 33% Pinot Meunier for the roundness of the fruit and 33% Pinot Noir for structure. A further 15% of still red wine from Champagne is added to this perfect blend. It is this final touch that gives the wine its characteristic colour and that extra aromatic complexity that makes all the difference. Both alcoholic fermentation and the subsequent malolactic fermentation take place entirely in temperature-controlled stainless-steel tanks. This stylistic choice avoids any interference from oak, keeping the wine’s profile clean and vertical. The bottles then rest in the darkness of the cellars for an ageing period of 2 to 3 years. The result captures the eye from the very first moment. The wine presents itself with a delicate shade reminiscent of salmon. The bubbles are extremely fine, light and incredibly persistent, creating an elegant effervescence. Bringing the glass to the nose, one is surprised by the refined bouquet, led by a broad range of small red fruits such as redcurrant, strawberry and raspberry. Warm spicy nuances of cinnamon and vanilla also emerge on the finish. On the palate, it reveals itself as a Champagne of great character and harmony, marked by a silky sip and beautiful aromatic persistence. In the kitchen, it proves to be a versatile glass. To express this terroir at its best, Charles Westler focuses on a rigorous oenological selection that brings together the distinctive features of the different grape varieties of the area. Although Pinot Meunier has historically been the undisputed king of the Vallée de la Marne thanks to its softness and immediacy, the Maison knows how to play ahead by masterfully combining the structure and character of Pinot Noir with the unmistakable fine and elegant touch of Chardonnay. But the real secret of their assemblages is the skilful use of “vins de réserve”, wines from previous vintages. In the cellar, the percentage of these historic reserves often reaches 30–35%.
