It is called Cabernet Italiano and is offered by Ventiterre, a brand owned by the Zonin family. It is made from Cabernet Franc and Cabernet Sauvignon grapes, harvested when perfectly ripe and immediately destemmed and soft-pressed. The subsequent fermentation is carried out according to traditional methods, albeit with the aid of modern technology. Once the transformation into alcohol is complete, the wine is racked into oak barrels, where it completes its maturation. Intense and lively ruby red in colour, it offers pleasant aromas of fresh fruit on the nose. Full and rich in nuances, it also satisfies on the palate, where it reveals itself to be a wine characterised by a nice dry flavour and robust body. Justly balanced, it is pleasantly persistent and versatile. Good throughout a meal, it is perfect with cold meats and medium-aged cheeses. Also excellent with roasts and stews.
