    • The Bienbebido collection is the result of a challenge: to find the perfect wine to drink with different dishes. To achieve this goal, Vintae organised a gathering of friends to experiment with different varieties and blends. Winemakers, sommeliers, chefs and wine enthusiasts tasted and tasted to define the perfect accompaniment to octopus, chicken, pork, beef, cheese or ham. They unanimously concluded that a fresh, silky Albariño is the perfect match for the special texture of octopus. But let's take it one step at a time. This white wine comes from the heart of Galicia, where the Atlantic meets the land. Bienbebido Pulpo is a fresh Albariño that belongs to the Rías Baixas Designation of Origin. Here, the oceanic climate, with cool summers and abundant rainfall, and the granite and sandy soils provide ideal conditions for growing Albariño. This native variety thrives in this environment, producing aromatic, fresh and mineral wines that reflect the influence of the sea and the terroir. Vinification involves low-temperature fermentation in stainless steel tanks to preserve the primary aromas of the grapes. The wine is then aged for 4 months on its lees (sur lie) in the same tank, where partial malolactic fermentation also takes place. This process gives the wine greater complexity and a softer texture, while maintaining its lively freshness. Straw yellow with greenish and golden reflections, the nose reveals intense aromas of tart fruit, such as green apple, lime and lemon, with delicate mineral notes derived from the stony soils of the region. On the palate, it is fresh and lively, with a marked acidity that balances the softness imparted by ageing on the lees. The finish is clean and inviting, stimulating the desire for another sip. As its name suggests, this Albariño is the ideal accompaniment to octopus, prepared in all its variations: Galician style, grilled, in salad or in empanada. Its acidity and freshness also make it perfect with other seafood, shellfish, white fish and Japanese cuisine.
