    • Blanco Polar Verdejo “Sobre lías” is a small gem from Castilla y León, bringing the vibrant energy of modern Spain into the glass. It is produced by Bodegas Frutos Villar in a land of contrasts, marked by long, freezing winters and hot, dry summers. This extreme temperature range, combined with poor, stony soils, is the secret behind the aromatic concentration of Verdejo, a grape that has found its ideal home here and retains an almost electric freshness. Classified as Vino de la Tierra de Castilla y León, this white wine embraces a production freedom that goes beyond the strict boundaries of individual appellations. Made from 100% Verdejo, a grape known for its aromatic exuberance and that characteristic slightly bitter finish that perfectly cleanses the palate. The grapes are harvested at night to preserve their volatile aromas from the heat of the day. After fermentation in stainless steel, the wine rests on its fine lees, meaning the spent yeasts, until clarification. This step, known as “sobre lías”, gives the wine a silkier texture and a complexity that simple vintage whites rarely achieve. In the glass, it shows a bright straw yellow colour with lively greenish reflections. On the nose, exotic fruit stands out, with mango and pineapple playing alongside notes of anise and wild fennel. On the palate, it is powerful and enveloping, almost creamy thanks to the lees ageing, immediately balanced by a fresh citrus lift. The finish is long and persistent, with that typical bitter almond note that instantly invites another sip.
