  • An explosion of freshness and complexity from the Côte des Bar. We are talking about Maison Vincent Couche's Champagne Zéro Dosage, a wine of great character and personality. Made from 85% Pinot Noir and 15% Chardonnay, the grapes come from the vineyards of Buxeuil. The Côte des Bar is a region renowned for its limestone and clay soils, which give the wines a robust structure and distinctive minerality. The Pinot Noir and Chardonnay grapes that make up this Champagne benefit from a temperate continental climate, with cold winters and warm summers, ideal for their balanced ripening. The dosage is zero, Dosage Zéro, resulting in an extremely dry Champagne with lively acidity. In the glass, it has an intense straw yellow colour. On the nose, it reveals a complex and fascinating bouquet, dominated by notes of red fruits, citrus fruits, white flowers and chalk. In the mouth, however, the wine is fresh and vibrant, with a fine and persistent bubble. The structure of the Pinot Noir is felt on the finish and leaves a pleasant sensation of freshness and savouriness. Ideal as an aperitif, it accompanies fish or meat hors d'oeuvres, savoury or slightly spicy first courses and with mature cheeses. A Champagne that can be drunk young, within 4 years of the harvest, if stored correctly, it can evolve and acquire complexity over time.

    Vincent Couche is in his own way a visionary winemaker who has guided his family business towards a sustainable and innovative future. With a remarkable sensitivity towards the environment and product quality, Vincent embarked on the path of biodynamic viticulture back in 2008, converting all the Maison's vineyards to this holistic philosophy. An artisanal and respectful approach in the vineyard and cellar. The grapes are cultivated without the use of pesticides or chemical herbicides, and in the cellar, spontaneous fermentation and the use of oak barrels for maturing the base wines are favoured. In addition, Vincent makes extensive use of 'vins de réserve', which lend complexity and depth to his Champagnes. The history of the company began with Vincent's father, André Couche, who in 1973 bought the largest vineyard planted to Pinot Noir in Buxeuil and a second plot in Montgueux, planted to Chardonnay. These vineyards are located in an area with an average warmer climate than the 'classic' Champagne region, but the presence of the Seine in the valley bottom ensures a valuable supply of humidity, favouring the balanced ripening of the grapes.
