  • Paul Coulet presents this interesting Champagne Bouzy MV Grand Cru Blanc De Noirs. This last indication, BdN, is crucial to guess what kind of Champagne we are about to taste. Blanc de Noir, in fact, indicates a white Champagne, made only from black grapes. In this particular case, Paul Coulet uses only Pinot Noir from vineyards rooted in soils typical for the region, with a high percentage of limestone and chalk. Vinification of the bases in temperature-controlled stainless steel, after alcoholic fermentation is completed, malolactic fermentation is also carried out. After bottling and frothing, the wine rests in the cellar for no less than 72 months on its lees, acquiring exceptional complexity and depth. Straw yellow in color, the nose has citrus and fruity aromas, enhanced by notes reminiscent of honey and bread crust. In the mouth, however, it is round, with juicy acidity that makes the taste savory and really pleasant. Closes with a moderately persistent finish. Excellent for a special dinner, it accompanies baked fish and white meats, even those prepared in elaborate recipes, with great satisfaction. It is at its best with tagliatelle noodles with crabmeat.

    Paul Clouet is one of the many small entities in the Champagne region capable of producing wines of the highest quality from grapes harvested in its own estate vineyards. Founded in Bouzy in 1907, the winery can count on a unique terroir with excellently exposed vineyards and chalky soils that are well suited to growing Pinot Noir. The Paul Clouet winery, now owned by Maire-Thérèse, granddaughter of the founder, covers about 6 hectares, divided among fifteen parcels all within the Grand Cru of Bouzy. The vineyards have an average age of about 30 years and produce between 50 and 60 thousand bottles annually. Handcrafted products with unmistakable style.
