    Champagne Boivin Extra Brut "Clos 667"
  • In Champagne, the term 'clos' refers to a vineyard bordered by a wall, moat or other natural boundary. These are often considered the most prestigious vineyards in the region, as they offer optimal growing conditions for the grapes. The one proposed here by Maison Boivin, in particular, is an Extra Brut, thus a particularly dry Champagne with a strong gastronomic vocation. Clos 667', specifically, is located in the village of Cumières, in the Vallée de la Marne. Here, the vineyard is composed of clay and limestone soils, which give the wine structure and minerality. 63% Chardonnay, 27% Pinot Noir and 10% Pinot Meunier, the bases are fermented in wood where they are also matured for 10 months. At the end of the long rest in contact with the yeasts, the wine is dosed with about 5 grams of sugar. In the glass it is a beautiful, bright, light yellow colour with a very fine and abundant effervescence. The nose is fresh and elegant, with a beautiful complexity that translates into aromas of honey, acacia flower and peach, then hints of currant, menthol and star anise. In the mouth it is soft, with a discreet bubble. The finish is fine and pleasantly saline. This Cuvée is at home in more than one circumstance. Excellent as an aperitif, of course, it can also accompany delicate and delicious dishes such as fried scallops, or white meats and fresh cheeses. Try it, however, with a simple 'plateau' of oysters.
