Halt. The one proposed here by Tenute Girolamo is not the 'usual' muscular red from our Meridione. No, the one proposed here is a Limited Edition, a Primitivo del Salento, late harvest. Rare and precious. The grapes chosen in this case come from the hills of upper Salento. 100% Primitivo that is left to ripen, or rather over-ripen, slowly on the vine. After harvesting, which takes place around the last week of September and is done exclusively by hand, the bunches of grapes undergo a further drying period in the cellar. Here they rest for about four weeks, losing some of the water contained in the berries and thus concentrating aromas and fragrances. Only then are the grapes subjected to a soft pressing. The little must obtained is left to macerate slowly and then fermented in stainless steel tanks for about 10 days. At the end of processing, the wine matures for about 6 months in French oak barriques before meeting the bottle. Intense ruby red colour tending towards violet, the nose reveals an intense aroma with evolved notes of candied fruit, dehydrated fruit, red fruit jam and hints of sweet spices. In the mouth, it is full, warm, sweet and elegantly dry. A meditation wine, it goes well with simple desserts and almond pastries. Also perfect with mature cheeses.
