This is Rotari's Trento DOC AlpeRegis 2018 Pas Dosé: a tribute to the verticality of the Dolomites and the legendary figure of King Rotari, the Lombard ruler who made Trentino's history a matter of character and nobility. We are in Mezzocorona, Piana Rotaliana, a natural amphitheatre protected by imposing rock walls that reflect the sun's heat onto the vineyards. This area enjoys a unique microclimate. The breezes blowing from Lake Garda mitigate the temperatures, while the temperature variations between day and night sculpt the acidity of the grapes. In this context, Chardonnay finds its ideal habitat, growing on mineral-rich alluvial soils. The grapes used for this wine are not harvested in a hurry, but are allowed to ripen slightly longer than the standard for sparkling wine bases. This bold choice allows the natural acidity of the grape variety to be balanced with a deeper aromatic structure. In the cellar, the care taken borders on the obsessive. After the first fermentation, the wine rests in the bottle for a full 60 months in contact with selected yeasts. This very long five-year hibernation gives it a surprising roundness, despite the decision not to add sugar at the time of disgorging. Being a Pas Dosé, in fact, means presenting itself naked, without the trickery of dosage, to show only the soul of the wine. The bright straw yellow colour immediately catches the eye, crossed by a very fine and persistent perlage that almost resembles a moving string of pearls. The nose is a journey through aromas. Clear notes of hazelnut and dried fruit, followed by juicy hints of peach, apricot and yellow apple. In the mouth, it is a real pleasure: the sip is decisive, intact and incredibly caressing. The sensation is that of a refined bubble that fills the mouth with elegance without ever being aggressive. Thanks to the long ageing on the lees and the structure of the 2018 vintage, this sparkling wine will be at its best in 10 to 15 years. Its natural freshness acts as a natural preservative, allowing the aromas to evolve towards even more complex and toasted notes.
