Crémant de Bourgogne Zéro by Paul Chollet, a sparkling wine that allows no compromise. We are in Savigny-lès-Beaune, a charming village where the history of wine can be felt in every alleyway. Here Maison Paul Chollet has been an institution since 1955. The Côte de Beaune, with its limestone and clay soils, gives the grapes razor-sharp freshness and deep minerality. A curious anecdote concerns the very birth of the Crémant de Bourgogne denomination, officially recognised only in 1975 in order to distinguish these wines from generic sparkling wines and to protect a production method closely mirroring that of their more famous northern neighbours. In this specific blend, Pinot Noir dominates the scene with 70% of the composition, bringing structure, strength and those characteristic small red berry notes of the region. Chardonnay, present at 30%, acts like a refined tailor, stitching everything together with floral aromatics and vibrant salinity. Production follows the “Méthode Traditionnelle”, the same used for the great classics. The base wine rests in stainless steel for six months, an essential stage for stabilising the primary aromas. Afterwards comes the second fermentation in bottle, where the wine ages on its lees for at least 18 months, far beyond the legal minimum. This long wait transforms the bubbles into something as fine as silk and enriches the aromatic profile. Finally, the “zero dosage” approach is a courageous choice that leaves no room for mistakes in the cellar, because the wine stands completely naked – without tricks or artificial sweetness. On the nose, notes of green apple, white flowers and a light touch of freshly baked bread crust. On the palate it is straight as an arrow, dry and incredibly refreshing. The structure of Pinot Noir is fully present, yet balanced by a citrus-driven finish that cleanses the palate in an instant. A wine that gets straight to the point without unnecessary detours.
