An uncompromising wine, loved for its ability to express the purity of its territory and the excellence of its winemaking technique. We are, of course, talking about Ca' del Bosco Franciacorta DOCG Vintage Collection Dosage Zéro, a product of the green Lombardy region. Among the hills of Franciacorta, renowned for the production of high-quality sparkling wines thanks to their favourable microclimate and morainic soils, grapes with unique characteristics are grown. Franciacorta DOCG, needless to say, is the first Italian designation dedicated exclusively to sparkling wines produced using the Metodo Classico. The Dosage Zéro version stands out for the absence of added sugars after disgorging, enhancing the wine's freshness and minerality. Ca' del Bosco's Vintage Collection Dosage Zéro is made from a blend of 80% Chardonnay, 4% Pinot Bianco and 16% Pinot Nero, sourced from 49 certified organic vineyards. After rigorous selection, the grapes are washed and dried. This is followed by 5 months of fermentation in oak barrels for the base wines and 48 months of ageing on the lees in the bottle. The subsequent disgorging takes place in the absence of oxygen, ensuring purity and longevity of the product. The result? A glass characterised by an intense straw yellow colour with a fine and persistent perlage. The nose is elegant, with hints of apple, citrus, hazelnut and freshly baked bread. On the palate, it is dry, complex and well-structured, with a pleasant bitter note on the finish. Perfect as an aperitif, it pairs well with delicate fish dishes, sushi, carpaccio, tartare and soft cheeses.
