"La Croix au Garde" Sancerre Blanc 2022

Sancerre Blanc AOC, La Croix au Garde is a very pleasant white wine offered here by Domaine Pellé. The pure Sauvignon Blanc grapes come in this case from estate vineyards located in Morogues, in the heart of the Sancerre AOC. Here, the soil, composed of "caillotes", has a calcareous clayey nature, with flint chips, capable of giving the wine minerality and freshness. The grapes are harvested by hand when fully ripe, while vinification is artisanal, with soft pressing and fermentation in stainless steel at a controlled temperature. The wine then matures on the fine lees for several months, acquiring aromatic complexity, great softness and persistence. In the glass it has a straw yellow colour of medium intensity. The nose offers a complex and elegant bouquet, with notes of flint, citrus fruits, ripe fruit and hints of spice. In the mouth it is equally intense and generous, with a rich and harmonious sip, a fine structure and a particularly long and persistent finish. On the table it goes perfectly with vegetable dishes, fish, shellfish and fresh cheese.
