Touraine-Oisly Sauvignon Vieilles Vignes "Fabel Barbou" 2021

A true son of the Loire, the Touraine-Oisly AOC Sauvignon Vieilles Vignes from Domaine Des Corbillières is a white wine that well represents its terroir of origin. The grapes of this Sauvignon used here come from vineyards located in Oisly, where the gentle slopes are kissed by the sun and the clay and limestone soils create an ideal habitat for the cultivation of superior grapes. The 'vieilles vignes', with their 40-55 years of age, in particular, give grapes of unequalled concentration and complexity. Vinification takes place naturally, with spontaneous fermentation and ageing on the fine lees for several months. The result is a wine that seduces the nose with a floral and fruity bouquet, enriched by notes of citrus fruits, white pepper and flint. In the mouth, it is soft and enveloping, with a vibrant acidity that lends freshness and persistence. Its elegant structure makes it an ideal companion for various dishes. Excellent with fish, shellfish, white meats and fresh cheeses. Also try it with vegetable and ricotta pies or with fresh goat cheese.
