Curtefrànca DOC Bianco di Contadi Castaldi is a wine produced from 100% Chardonnay grapes, from vineyards located in the municipalities of Adro, Capriolo, Cazzago San Martino and Erbusco. The grapes, from 22-year-old vines, grow on morainic soils of glacial origin, giving the wine a remarkable minerality. The grapes, hand-picked and carefully selected, are softly pressed and the must decanted statically under cold conditions. Fermentation takes place in stainless steel with selected yeasts. This is followed by malolactic fermentation, carried out partially, and the delicate 7-month ageing phase in stainless steel. After bottling, the wine then rests in the cellar for several months. Fresh, savoury and mineral, it best expresses the characteristics of the Chardonnay grape variety and the Franciacorta terroir. In the glass, Curtefrànca DOC Bianco presents a bright yellow colour with faint golden reflections. The nose offers a broad and complex bouquet, with notes of exotic fruit, white flowers, tobacco, sweet almond and vanilla. In the mouth it is savoury, with traces of minerals and a lively fragrance. The pleasant acidic vein prolongs the persistence in the mouth. Perfect with fish dishes, shellfish, molluscs and fresh cheeses. It also goes well with light first courses and starters. Founded in 1991, Contadi Castaldi is one of the best-loved wineries in Franciacorta.
