  • Sensations Colour: straw yellow with green reflections, the perlage is minute, tight and persistent. Nose: fine and complex, it expresses itself with floral hints of white-fleshed fruit, rounded off with nuances of almond and acacia honey. Taste: elegant, savoury, mineral and harmoniously structured with great balance and excellent persistence.
  • Vinification After harvesting, a very soft pressing follows. The best must undergoes static clarification, followed by alcoholic fermentation at a controlled temperature (13-14 °C) in stainless steel tanks. Secondary fermentation takes place in the bottle according to the Metodo Classico for approximately 50-60 days in the cool underground cellars in Colombo, followed by a minimum of 12 months on the lees. Traditional remuage on pupitres and dégorgement à la glace. An ideal period of bottle ageing follows

    "Natusia" Spumante Metodo Classico Piemonte DOC 2021
  • Natusia, Piedmont DOC Metodo Classico, is one of the good sparkling wines produced by the Colombo winery. 60% Pinot Noir and 40% Chardonnay, the grapes are hand-picked in small crates and come exclusively from the company's vineyards in Bubbio, in the province of Asti. After the harvest, the grapes are brought to the cellar to be subjected to a very soft pressing. The best must is then subjected to static clarification, followed by temperature-controlled alcoholic fermentation in stainless steel tanks. Foaming, on the other hand, takes place according to the Metodo Classico, with subsequent maturation on the lees for a minimum period of 12 months. Straw yellow in colour with green highlights, the perlage is fine, tight and persistent. The nose reveals a fine and complex bouquet, with floral and white-fleshed fruit scents. Then almond and acacia honey. In the mouth it is elegant, savoury, mineral and harmoniously structured with great balance and excellent persistence.
